- 1 8 oz. softened cream cheese
- ½ c. finely chopped carrot
- ½ c. finely chopped zucchini
- 1 T. chopped parsley
- ¼ tsp. garlic salt
- dash of pepper
- 40 Cherry Tomatoes
- Combine ingredients, mixing until well blended.
- With paring knife, scoop top and seeds from cherry or other small tomatoes.
- Stuff tomatoes with cheese filling, sprinkle with paprika and chill until serving.
- Makes about 40 appetizers
