Quinoa Apple Breakfast Bites

  • 2 C. cooked quinoa
  • 1 apple, chopped
  • 3 eggs
  • 1/4 C. maple syrup
  • 1/2 tsp. cinnamon
  • Pinch of salt


  • Preheat oven to 350 °F. Spray a mini muffin pan with cooking spray.
  • Put all ingredients into a medium sized bowl. Stir until combined. Scoop into prepared pan. Bake for about 12-13 minutes just until set. Do not over bake. Cool slightly before removing from pan. Eat immediately or store in the refrigerator for later. Reheat in microwave for 15 seconds.
