Potato Filling

Ingredients

  • 1 C. celery
  • 1 medium onion
  • 1/2 lb. butter
  • 1 qt. (approximately) mashed potatoes
  • 4 qts. or 2 bags breadcrumbs
  • 2 pinches saffron (soak in 1 C. boiling water)
  • 6 eggs, beaten
  • 1 qt. (plus) milk
  • 2 1/2 tsp. salt
  • 1 tsp. pepper

Directions

  • Cook first three ingredients for 15 minutes. Pour celery mixture over bread; mix. Add other ingredients; mixing well. Make sure it is very moist, add more milk if necessary. Pour in greased casserole. Bake at 350°F for 45 minutes. Can be frozen.
