Pineapple French Toast

Ingredients

  • Nonstick spray
  • 4 eggs
  • 1/2 C. orange juice
  • 1/2 C. cream
  • 1-8 oz. can crushed pineapple
  • 1/4 C. sugar
  • 1 tsp. grated orange zest
  • 1/2 tsp. vanilla
  • 1/4 tsp. nutmeg
  • 1 loaf French bread, cut into 1″ slices
  • Topping:
  • Butter
  • Brown sugar
  • Chopped pecans or walnuts

Directions

  • The night before, spray casserole dish with nonstick spray. Arrange bread slices in dish. Combine all ingredients and pour over bread. Put thin pats of butter on top of mixture. Put a forkful of brown sugar on top and pat down. Sprinkle with nuts. Cover and refrigerate. The next morning, preheat oven to 350°F and bake 40 minutes or until golden. Serves 6.
