Mixed Berry Overnight French Toast

Ingredients

  • 14 slices Texas toast
  • 8 eggs
  • 2½ c. half & half
  • ¾ c. sugar
  • 2 tsp. vanilla
  • 1½ tsp. cinnamon
  • Topping:
  • ½ c. flour
  • ½ c. brown sugar
  • 1 tsp. cinnamon
  • ¼ tsp. salt
  • ½ c. cold butter
  • fresh berries

Directions

  • Cube Texas toast and put in a 9″ x 13″ buttered casserole.
  • Mix eggs, half & half, sugar, vanilla and cinnamon and pour over Texas toast.
  • Cover and refrigerate overnight.
  • In morning:
  • Bring to room temperature for about 30 minutes.
  • Mix flour, brown sugar, cinnamon and salt.
  • Cut in cubed cold butter to form crumb topping.
  • Distribute fresh berries on top of French toast and then top the berries with the crumb mixture.
  • Do not let topping come to room temperature; you want the butter to still be cold when put in oven.
  • Bake at 350 °F. for 50 minutes or until an inserted knife comes out clean.
  • Serve with warm pure maple syrup.
