  • 1 bag frozen diced potatoes (or 5 potatoes, diced small, then parboiled)
  • 1 onion, diced
  • 1/2 stick butter
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic or garlic powder (about 1 T. fresh or 1 tsp. powder)
  • Caraway seeds (about 1 tsp.)
  • Pinch of nutmeg (optional)


  • Throw potatoes on a sheet pan, be sure that if you are using fresh cooked potatoes, to drain all water and pat dry with a paper towel. Add all of your seasoning to the potatoes. Cut butter in small pieces and toss over the potatoes. Bake in a 425°F oven until golden brown. Butter will brown the potatoes nicely and the caraway will give the potatoes a rich flavor. I am not fond of potatoes, never have been, however when you give them purpose and a richness, you sold me. This one comes from Germany. The caraway gives the potatoes such a unique flavor that I always go back for seconds; those souls more daring, add a pinch of nutmeg as well… see if the crowd at the breakfast table can figure it all out!
