  • 2 C. grated Monterey Jack cheese
  • 2 cans green chilies
  • 4 eggs, well beaten


  • Preheat oven to 350°F. Sprinkle the cheese and chilies in the bottom of a 9×13″ baking dish. Add the eggs and bake for 30 to 40 minutes until firm and golden brown. Cool to room temperature and then cut into squares. This can be served hot, cold, or room temperature. Great recipe for parties and can be made ahead of time.
