German Apple Pancakes



  • 4 eggs
  • 3/4 C. flour (I now use self-rising flour and skip the baking powder and salt)
  • 3/4 C. milk
  • 1/4 tsp. butter
  • 1/4 C. brown sugar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • Pinch baking powder
  • 2 medium apples, cored, peeled, and thinly sliced
  • Chopped pecans or raisins or dried cranberries (optional)


  • Heat oven to 400°F. Place two round glass pie pans in oven to heat. Beat eggs, flour, milk and salt together for 1 minute. Remove pie pans from oven. Place 2 tablespoons butter in each pan and rotate pans until butter is melted and coats bottom and sides of pan. In each pan, arrange the slices from apple; divide the batter evenly and pour over apple slices. Mix sugar and cinnamon and sprinkle over batter in each pan. You may also sprinkle pecans or raisins over pies at this time, for variation. Bake until puffed and golden brown, about 20 to 25 minutes. Enjoy with sausage and syrup for breakfast or with ice cream or whipping cream for dessert. Two large pancakes serves 4 people.
