Fruit Nut Bread



  • 2 C. all-purpose flour, sifted
  • 1 C. brown sugar
  • 1 1/2 tsp. double-acting baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 C. butter
  • 3/4 C. orange juice
  • 1 T. grated orange rind
  • 1 egg, well beaten
  • 1/2 C. chopped walnuts
  • 3 T. sour cream
  • 2 C. cranberries or blueberries(or you can substitute apples, pears, and so on, you may substitute things like pumpkin or bananas, but will have to adjust the liquid)


  • Sift together flour, sugar, baking powder, soda and salt. With your fingertips, mix butter in with dry mixture. Combine orange juice and grated rind with well beaten egg. Pour all at once into dry ingredients, mixing just enough to dampen. Add sour cream. Mix a bit more. Carefully fold in chopped nuts and cranberries. Spoon into a greased loaf pan (9x5x3″). Spread corners and sides slightly higher than center. Bake in moderate oven at 350F for about 1 hour (until crust is golden brown and toothpick inserted comes out clean.) Remove from pan. Store overnight for easy slicing.
