Curried Salmon

  • 1 small can salmon
  • 2 C. milk
  • 2 T. butter
  • 2 T. flour
  • 1 1/2 C. cooked rice
  • 2 hard-cooked eggs, sliced
  • 2 tsp. curry powder
  • 2 tsp. lemon juice


  • Melt butter in a pan; add flour and curry powder. Stir in milk and fish liquid. Add lemon juice; stir until thick. Take off heat and add flaked salmon. Put half of the rice in a baking dish, then sliced egg, salmon and rice, in layers. Sprinkle bread crumbs over and small knobs of butter. Bake in a hot oven (400°F) until brown. Makes 4 to 6 servings.
