  • 4 large portabella mushrooms, stems removed
  • 2 pkgs. frozen creamed spinach, thawed
  • 4 eggs
  • 1/4 C. shredded cheese
  • 1/2 C. crumbled cooked bacon


  • Place mushroom in an ungreased baking dish, stem side up. Drain spinach. Spoon into mushrooms, building up the sided. Carefully crack an egg into the center of each mushroom; sprinkle with cheese and bacon. Bake at 375 °F. for 18-20 minutes until eggs are set. Sprinkle with salt and pepper.
