Apricot Chicken Casserole

Ingredients

  • 4 boneless chicken breasts
  • 1 c. Catalina salad dressing
  • 1 package onion soup mix
  • 1 c. crispy fried onions
  • 1 c. apricot preserves

Directions

  • Preheat oven to 375 °F.
  • Grease a 9″ x 13″ casserole dish with cooking spray.
  • Whisk together the Catalina dressing, onion soup mix and apricot preserves.
  • Place chicken breasts in casserole and cover with apricot Catalina mixture.
  • Bake for 40 minutes or until chicken is cooked through.
  • Remove from oven and garnish with crispy fried onions.
  • After a long day with our wonderful guests this is an easy meal to pop in the oven!!
