Almond Paste

Ingredients

  • 3 1/4 C. blanched almonds
  • 1/3 + 1/4 C. water
  • 1/4 C. honey
  • 1 1/4 C. sugar
  • 1/4 C. amaretto liquor
  • 1/4 C. butter, cubed

Directions

  • In blender, process almonds to a course grind. Boil water, honey and sugar and pour hot syrup into ground almonds. Process 5 minutes and add amaretto. Process another 5 minutes and add butter and blend. Divide almond paste into 1 cup servings. Wrap in plastic wrap and chill. Can be frozen for up to 3 months.
  • Makes 4 cups.
  • (For raw almonds, bring 1 qt. water to a boil. Add raw almonds and boil exactly 1 minute. Drain, pop skins off by rolling in a kitchen towel.
