1 large vidalia onion, chopped
1 medium red pepper, chopped
2 cloves garlic, minced
1/4 tsp. salt
3 large sweet potatoes, cut into 1/2 inch cube
Chinese five spice or premixed cinnamon and sugar
Add 2 T. olive oil to a large fryin’ pan. Sautee onions until they soften. Add chopped red pepper and garlic. Add cubed sweet potatoes and another 2 T. olive oil.
Cook 12-15 minutes, stirring occasionally, until potatoes and cooked but still firm. Add seasoning of your choice and serve.
This dish can be prepared in a 375 degree oven just as easily.
Simply substitute “baking sheet” for “fryin’ pan” and “sautee” the onions on the baking sheet in the oven. Follow remaining recipe steps. The final doneness should always be determined by the cook at hand, therefore definite “Done” times are difficult to project.
