German Red Cabbage (Rotkohl)



1/2 C. butter or bacon fat
1/4 C. chopped onions
1/4 C. sugar
3 lb. red cabbage (shredded)
1/4 tsp. salt
1 apple (peeled & sliced)
1/2 C. water or soup stock
1 T. flour
1/2 C. red wine
3 T. vinegar

Melt fat. Fry onion and sugar. Add cabbage, salt, apple, and water or soup broth.
Cook 30 minutes on low to medium heat, or until soft.
Blend in flour; add wine, vinegar, and more broth or water if necessary.
Serves 7 - 8 persons.
