1 1/2 C. sugar
1 1/2 C. brown sugar
1 C. oil
2 C. cooked pumpkin
or butternut squash
3 1/2 C. sifted flour
1 1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
2/3 C. cold water
Pre-heat oven to 350 degrees
Grease 3 bread pans (or tube cake pan).
Blend sugar, eggs, and oil in a large bowl. Add pumpkin and blend.
Sift the dry ingredients together.
Add to the egg mixture alternately with water.
Beat until blended well (about 2 min.).
Fold in nuts (optional).
Spoon batter into 3 greased bread pans (or tube cake pan).
Bake at 350 degrees for 45 minutes (or until done).
