Peanut Butter Granola



4 T. (1/2 stick) unsalted butter
1 C. chunky peanut butter
1/2 C. honey
1/2 C. brown sugar (dark or light)
1 tsp. vanilla extract
1/2 tsp. salt
3 1/2 C. rolled oats (do not use quick-cooking)

Preheat oven to 350F. Have an ungreased rimmed baking sheet at hand. Combine butter, peanut butter and honey in a microwave safe medium bowl. Microwave on high for 1 minute; stir. The mixture should be smooth and thick. If needed, microwave on high for another minute. Add brown sugar, vanilla extract and salt; stir until smooth. Add oats and mix until evenly coated. Spread the mixture evenly on the baking sheet and bake for 10 minutes or just until browned and crisp. Let cook on the baking sheet; break the granola up into bite-sized pieces. Store in an airtight container.
Makes about 6 cups (12 servings)
