Stuffed Flank Steak



1 lb. flank steak*
1 pkg. frozen spinach, thawed and drained (or 1 bag fresh spinach, cooked and drained)
4 slices thinly sliced provolone cheese
1/3 C. feta cheese
1 small jar roasted red peppers
Salt and pepper

Preheat oven to 375F Spray a loaf pan with cooking spray and set aside. Spread the spinach evenly over the steak, leaving 1/2" from the edges of the meat. Sprinkle feta cheese and roasted red peppers over the spinach. Top with provolone cheese. Roll the steak lengthwise, jelly roll fashion, with the seam side down. You can tie it with string at this point if it doesn't stay in a roll. Place pan in oven and bake for 45 minutes to 1 hour. Let it stand for 15 minutes before slicing.

*Tenderize steak by layering between two sheets of waxed paper and pounding with a mallet until it becomes a thin rectangle.
