1 large apple 1 1/2 C. flour 1/2 C. wheat flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 T. cinnamon 1/4 tsp. allspice 1/4 tsp. nutmeg 1/8 tsp. cloves 1 C. apple juice 3/4 C. soy milk 1/3 C. apple juice 2 T. oil 4 T. sugar 2 tsp. vanilla
Preheat waffle iron. Mix wet ingredients. Mix dry ingredients. Blend together 2 minutes; fold in grated apple. Cook as your waffle iron directions suggest. For a crispier waffle, leave in the iron an extra 30 seconds or so. This is a heavy waffle-be sure to give it time to cook through.
