Jo's Buttermilk Pancakes

French Toast/Waffles/Pancakes/Crepes


2 large eggs, beaten
2 C. buttermilk
1/4 C. olive oil
1 3/4 C. flour
2 T. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Preheat griddle to 350F. Mix wet ingredients in large bowl. Add dry ingredients. Mix until large lumps are gone. Do not over mix! Butter the griddle. Use a 1/4 cup measuring cup to pour batter on hot griddle.
Makes 16 pancakes.
