6 eggs 1 1/2 C. milk 1 1/2 C. flour 3 T. sugar 1 tsp. vanilla 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 C. butter 2 apples, peeled, cored and sliced (original recipe calls for Granny Smith-I use whatever I have on hand) 3-4 Tbsp Brown Sugar
Preheat oven to 425F degrees. Mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until well blended. Melt butter in 13X9 baking pan in hot oven. Add apples and keep in oven several minutes until the butter sizzles; do not let them brown. Take out of oven and pour batter over top. Sprinkle with brown sugar and additional cinnamon. Bake 20 minutes or until puffed and brown.
