Quinoa Apple Breakfast Bites

Egg Dishes


2 C. cooked quinoa
1 apple, chopped
3 eggs
1/4 C. maple syrup
1/2 tsp. cinnamon
Pinch of salt

Preheat oven to 350F. Spray a mini muffin pan with cooking spray.
Put all ingredients into a medium sized bowl. Stir until combined. Scoop into prepared pan. Bake for about 12-13 minutes just until set. Do not over bake. Cool slightly before removing from pan. Eat immediately or store in the refrigerator for later. Reheat in microwave for 15 seconds.
