Eggs Golden Rod

Egg Dishes


6 eggs, hard boiled
6 T. butter
7 T. flour
1 1/4 tsp. salt
1/4 tsp. pepper
1 tsp. Italian seasoning (optional)
3 C. milk

Melt butter; add flour, salt and pepper. Stir until well blended. Slowly add milk; stirring constantly. Cook until smooth. Save 2 egg yolks, crumble for topping. Chop eggs and stir into sauce. Serve over English
muffins or toast. Sprinkle crumbled egg yolks on top. Sprinkle with paprika or parsley.
