Eggs Florentine

Egg Dishes


6 C. fresh baby spinach, chopped
2 T. unsalted butter
2 T. shallots, small dice
8 eggs
1/2 C. whole milk
1 C. sour cream
2 C. grated Swiss cheese
2 C. crumbled feta cheese
1/8 tsp. nutmeg
1 tsp. sugar

Preheat oven to 350F. Saute spinach and shallots in 2 tablespoons butter in large pan; set aside. In large bowl, whisk eggs, milk, sour cream, nutmeg and sugar. Fold in cheeses and spinach. Pour into a greased 7x11" baking dish. Bake at 350F. for 40 minutes or until
slightly browned. Let rest for 15 minutes before cutting. Serves 8.
