1/2 lb. bacon Fresh spinach 8 large eggs 1/2 C. half & half or milk 1/2 tsp. ground mustard 1/2 tsp. Italian seasoning Pinch of nutmeg Salt and pepper Shredded cheese (I use a 4 cheese blend)
Preheat oven to 350F. Spray a quiche pan or a deep dish pie plate with Pam. Chop bacon and fry until crisp. Drain on paper towels. Throw a few handfuls of fresh spinach into the same pan (after pouring bacon grease out). Saute until wilted. Beat eggs and half & half with a whisk until well combined. Add the seasonings. Sprinkle cheese to lightly cover the bottom of the quiche pan. Layer the bacon, then the spinach on top of cheese. Slowly pour the egg mixture over. Top with more cheese. Bake in 350F. oven about 25 minutes or until puffed and set.
