1 gal. whole milk (can use 2%) 1/6 tsp. yogurt culture (or 2 C. yogurt that has active cultures in it) 2/3 C. tapioca starch 2/3 C. water
Heat milk in crockpot to 180F. This takes about 2 hours on high. Use a thermometer to check. Mix tapioca starch in water to dissolve; mix into the warmed milk. Allow milk to cool to 110 F. Then add yogurt culture to the milk and mix thoroughly. Cover the crockpot and place in oven (light on if electric oven) for 8-10 hours. Remove from oven and it is finished. Store in refrigerator. Add any flavors you like.
