Zucchini Bread

Breads/Muffins/Coffee Cake/Scones


3 eggs
2 C. sugar
1 C. vegetable oil
3 C. grated unpeeled zucchini
3 tsp. vanilla
3 C. flour
1/4 tsp. baking powder
3 tsp. cinnamon
1 C. chopped walnuts
1 tsp. salt
1 C. golden raisins
1 tsp. baking soda

Beat eggs until light and foamy. Add the sugar, oil, zucchini and vanilla; mix well. Combine the flour, salt, baking soda, baking powder and cinnamon. Add to the zucchini batter. Add nuts and raisins. Pour into 2 greased 9x5" loaf pans. Bake at 350F for 1 hour.
