Pumpkin Bread

Breads/Muffins/Coffee Cake/Scones


1 C. sugar
1 C. canned pumpkin
1/3 C. vegetable oil
1 tsp. vanilla
2 eggs
1 1/2 C. flour
1/2 C. nuts, optional
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. ground cloves

Cream together the first 5 ingredients. Stir in the remainder until everything is moist. Bake at 350F in three small loaf pans (40 minutes) or one large loaf pan (60 minutes).
