Mandarin Orange Muffins

Breads/Muffins/Coffee Cake/Scones


1-11 oz. can mandarin oranges
1 T. orange extract
1 egg
1 C. sour cream
1/2 C. unsalted butter, melted
1/2 C. granulated sugar
1/2 C. brown sugar
2 C. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 C. chopped pecans

Preheat oven to 400F. Drain oranges; reserve liquid. Place oranges in a measuring cup. Add orange extract and reserved liquid to equal 1 cup. In large bowl, beat egg, sour cream, butter and sugars; stir in orange mixture. Add flour, baking powder, baking soda and salt. Mix
just until blended. Fold in pecans. Grease muffin tin and fill two-thirds full. Bake 20 to 25 minutes or until muffins test done.
