3/4 C. barley, cooked, drained and cooled 1 C. canned Corn niblets, drained 15 oz. can black beans, drained and rinsed 1 large red bell pepper, diced 1/2 C. chopped green onion 1/2 C. chopped fresh cilantro
Dressing: 1/3 C. orange juice 1/3 C. cider vinegar 1/4 C. olive oil 1 1/2 tsp ground cumin 1/4 tsp salt 1 tsp. oregano 1 sm. clove garlic, minced 1/2 tsp. hot sauce
Put salad ingredients in a large bowl. Whisk together the dressing and blend. Pour over barley mixture and stir to coat well.
