Nanny’s Oatmeal Pancakes

French Toast/Waffles/Pancakes/Crepes

Ingredients

2 C. rolled oats
2 C. buttermilk
1/4 C. melted and cooled butter
2 Eggs, lightly beaten
1/2 C. flour
2 T. granulated white sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt

Optional goodies 1/2 C. raisins, 1/2 C. dry cranberries, 1/2 C. shredded coconut,or any combination thereof but not to exceed 1/2 Cup total.

Directions

Start these the night before by soaking the rolled oats in the buttermilk. Cover and keep the oats in the frig overnight.
In the morning add the beaten eggs and melted butter to the oatmeal and buttermilk that soaked overnight.
Then stir in the dry ingredients. Add any Optional Goodies that you want to try.
In lieu of adding optional goodies we listed we usually drop fresh blueberries to the batter just before they hit the griddle!
