Tofu Tostadas

Ingredients

14 oz. tofu, diced
1/2 diced bell pepper
1/2 diced tomato
2 T. minced onion
3 T. chopped cilantro
1 clove minced garlic

juice of 1 lime
2 T. olive oil
salt and pepper to taste
Directions

Combine first six ingredients in a bowl. Drizzle in lime juice, olive oil, salt and pepper. To serve, place 2 to 4 tablespoons of mixture on a tostada shell;garnish with rice cheese.
