Potato Filling

Ingredients

1 C. celery
1 medium onion
1/2 lb. butter
1 qt. (approximately) mashed potatoes
4 qts. or 2 bags breadcrumbs
2 pinches saffron (soak in 1 C. boiling water)
6 eggs, beaten
1 qt. (plus) milk
2 1/2 tsp. salt
1 tsp. pepper
Directions

Cook first three ingredients for 15 minutes. Pour celery mixture over bread; mix. Add other ingredients; mixing well. Make sure it is very moist, add more milk if necessary. Pour in greased casserole. Bake at 350F for 45 minutes. Can be frozen.
