1 small can salmon 2 C. milk 2 T. butter 2 T. flour 1 1/2 C. cooked rice 2 hard-cooked eggs, sliced 2 tsp. curry powder 2 tsp. lemon juice
Melt butter in a pan; add flour and curry powder. Stir in milk and fish liquid. Add lemon juice; stir until thick. Take off heat and add flaked salmon. Put half of the rice in a baking dish, then sliced egg, salmon and rice, in layers. Sprinkle bread crumbs over and small knobs of butter. Bake in a hot oven (400F) until brown. Makes 4 to 6 servings.
