Potato Crust Quiche

Ingredients

Crust:
3 T. oil
3 C. shredded raw potato

Filling:
1 C. grated cheese (your choice)
1/4 C. chopped onion
1 C. rich milk
2 eggs
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. parsley flakes
Directions

Crust: Form into 9" pie plate and bake for 15 minutes at 425F.

Filling: Mix well and pour into crust. Bake 30 minutes at 425F. Allow to cool for 5 minutes; cut and serve.
