1 1/2 C. all-purpose flour 1/2 C. sugar 2 tsp. baking powder 1/2 tsp. salt 1/4 C. melted butter 1 egg, lightly beaten 1/4 C. oil 1/4 C. milk 1/4 C. orange juice 1/8 C. mandarin orange segments, canned 2/3 C. coarsely chopped cranberries 1/2 C. chopped walnuts
Mix flour, sugar, baking powder and salt in a bowl. Combine the eggs, oil and butter. Add the milk and butter; stir into the dry ingredients until just moistened. Stir in berries, nuts and mandarins. Spoon into greased muffin pans to 2/3 full. Bake in a 400F oven for 18 minutes or until light golden brown on top. Makes 12 muffins.
