4 large portabella mushrooms, stems removed 2 pkgs. frozen creamed spinach, thawed 4 eggs 1/4 C. shredded cheese 1/2 C. crumbled cooked bacon
Place mushroom in an ungreased baking dish, stem side up. Drain spinach. Spoon into mushrooms, building up the sided. Carefully crack an egg into the center of each mushroom; sprinkle with cheese and bacon. Bake at 375 F. for 18-20 minutes until eggs are set. Sprinkle with salt and pepper.
